For today’s summer dish must-try: @inrhispantry ‘s Fattoush-inspired loaded hummus. With Lisa’s Smooth Hummus this can be pulled together in only 15 minutes and is such a beautiful snack for any occasion✨

RECIPE
• cut open two pita breads carefully with a knife, then brush lightly with oil and bake at 180 degrees Celsius fan bake until golden and crispy; turning once during cooking.
• make the dressing by combining 2Tbsp olive oil, juice of 1/2 lemon, Itsp pomegranate molasses or maple syrup, 1 minced garlic clove and 1tsp sumac. Season to taste with salt and pepper.
• dice up 1/4 telegraph cucumber, 4 cherry tomatoes and 1 large radish, and combine in a bowl with a handful of chopped parsley and 1 generous tablespoon of the dressing.
• spread a 200g pot of Lisa's Smooth Hummus onto a plate, then top with the diced fattoush mixture. Drizzle over the remaining dressing, then serve immediately with the crispy homemade pita chips!

Ingredients:
Pasta of your choice
1 x Red onion
1 x Pack of broccolini
Any of Lisa’s deluxe hummus range

Steps:
1️⃣Boil pasta (leave 1 cup of pasta water)
2️⃣Chop up & pan fry veggies
3️⃣Take off the heat + add in pasta, pasta water
4️⃣Mix & enjoy!
